SPINACH SOUFFLE 
1 lb. cottage cheese
5 eggs, beaten slightly
1/4 c. butter in small pieces
1 c. grated cheddar cheese
1 (10 oz.) pkg. frozen chopped spinach
3 tbsp. flour

Mix cottage cheese, eggs, butter, cheese and flour. Cook spinach according to package directions. Drain thoroughly and stir into cheese mixture. Bake uncovered in greased casserole at 350 degrees for 1 hour. Serves 4. Can also be made with frozen chopped broccoli.
