SPINACH SOUFFLE 
1 lg. carton cottage cheese
6 eggs, beaten
1/2 lb. grated Cheddar cheese
2 pkg. frozen chopped spinach, thawed
6 tbsp. flour (or a little less)

Put cottage cheese in bowl. Add beaten eggs. Cut butter and cheese in coarse chunks. Add to cottage cheese and eggs. Mix well. Add spinach and flour. Bake in 3 quart greased dish at 350 degrees for 1 hour.
