POTATO SALAD 
10 lbs. potatoes
10 hard boiled eggs
1 bunch celery, chopped
Salt & pepper
1 l g. onion, chopped
1 green pepper, chopped
French dressing

Cook potatoes in skins, peel and cube while hot. Chop eggs and add in layers with potato and seasonings. Add enough French dressing to marinate thoroughly. When almost cold, add enough salad dressing for light consistency. Serves 25.
