CANDIED YAMS 
12 sm. yams, peeled and washed, sliced
1/2 c. brown sugar
1 1/2 c. orange juice
2 tbsp. orange marmalade
2 tbsp. cornstarch
1/4 c. water
2 c. miniature marshmallows
Salt and pepper

Place yams in casserole dish. in saucepan, bring together the orange juice, brown sugar, and marmalade to a boil. Dilute cornstarch with 1/4 cup water and add to boiling mixture. Add salt and pepper to taste and pour over yams. Top with marshmallows and bake in slow oven until yams are soft, about 1 hour and 20 minutes.
