CANDIED YAMS 
4 lg. sweet potatoes
3/4 c. brown sugar
1 c. butter
1/2 tsp. salt
1/2 c. water
1/2 c. orange juice
1/2 tsp. nutmeg
2 tbsp. cornstarch
1/2 c. chopped pecans, optional

Cook yams until done, about 25 minutes, over medium heat. Cool, slice 1/2 inch. Place in baking dish.

Combine water, orange juice, butter, nutmeg, salt and brown sugar. Pour in saucepan. Bring to boiling. Cool. Add cornstarch. Pour over potatoes. Bake in oven 25-30 minutes. Sprinkle nuts as desired. Bake 5 minutes more. Serve.
