CARAMEL BANANA CAKE 
1 yellow cake mix
2 c. brown sugar, firmly packed
1/4 tsp. salt
4 tbsp. butter
2/3 c. milk
2 tbsp. butter
2 tsp. vanilla
confectioners sugar (if needed)
bananas, peeled and sliced

Cook cake mix according to package directions in 2 (8-inch) pans. After cake is done, let cool and then slice each cake in two to form 4 layers.

Frosting: Put brown sugar, salt, butter and milk in saucepan. Cook, stirring until sugar is dissolved, then cook without stirring until done. To test doneness, drop a small amount in 1/2 cup water. If it forms a good sound, soft ball it is done. Cool to lukewarm. Put in bowl until the mixture thickens, adding 2 tablespoons butter and 2 teaspoons vanilla. If you don't get it quite thick enough, add some confectioners sugar.

Layers: Place one layer of cake on cake dish. Follow with a layer of frosting and then a layer of bananas. Repeat with remaining layers. On the final layer of cake, add frosting to top and sides of cake.

Note: If you have any frosting left, you can make peanut butter fudge with it.
