ZUCCHINI BAKE 
4-5 zucchini, sliced
1 can diced tomatoes
2 tbsp. butter
1 1/2 cup sliced fresh mushrooms
1 clove of garlic, crushed
1 cup mozzarella cheese
1 cup croutons, crushed

Melt butter in skillet, add mushrooms and zucchini. Saute until tender. Add tomatoes and garlic. Pour into small casserole dish, top with croutons, sprinkle cheese on top.

Bake at 350°F for 25 minutes or until cheese is completely melted.
