ZUCCHINI, BEEF & CHEESE BAKE 
1 lb. ground beef
1/2 lg. onion, chopped
1/2 tsp. garlic powder
1 lb. fresh zucchini
6 oz. cheddar cheese
1 can mushroom soup

Saute ground beef and onion. Add garlic powder. Slice zucchini 1/4 inch thick and cook for 5 minutes until tender. Use a 8 x 8 inch baking dish. Layer meat mixture, then zucchini and grated cheese. Repeat layers, pour mushroom soup over the top and bake at 350 degrees for 30 minutes until tender and bubbly. Serves 4.
