POTATOES VINIGRETTE 
2 1/2 lb. red potatoes
1/2 c. chopped parsley
1 sm. chopped purple onion
1 tbsp. Dijon mustard
1 tsp. salt
1/4 tsp. pepper
1/2 c. apple cider vinegar
1/3 c. safflower oil
1/3 c. olive oil

Steam the potatoes until soft. Let stand 10 minutes. Dice, then combine with parsley and onion.

Combine mustard, salt, pepper, vinegar and oils then pour over hot potatoes. Toss gently. Serve hot or can be chilled before serving.
