MINI CHOCOLATE BOURBON BITES 
1/2 c. butter
1/2 c. packed brown sugar
1/4 c. bourbon
1 c. all-purpose flour
3 tbsp. unsweetened cocoa powder
1/2 c. miniature semi-sweet chocolate pieces
1 slightly beaten egg white
1 c. finely chopped pecans

In a large mixer bowl, beat butter and sugar with electric mixer on medium speed until fluffy. Add bourbon; beat well. Gradually add flour and cocoa powder, beating until well mixed. Stir in chocolate pieces. Chill 2 hours or until firm enough to handle.

Shape dough into 1-inch balls. Roll in egg white, then in nuts. Place on a lightly greased baking sheet. Bake in a 350 degree oven for about 12 minutes, or until edges are firm. (The center will still be soft.) Cool on baking sheet 1 minute. Cool on wire racks. Makes about 30.
