GREASE-FREE DOUGHNUTS 
4 c. sifted flour
1/2 tsp. salt
1 1/3 c. sugar
2 tbsp. melted butter
1/4 tsp. lemon extract
4 tsp. baking powder
1/4 tsp. nutmeg
2 eggs, well beaten
1 c. milk

Sift flour once, measure; add baking powder, salt and nutmeg. Mix thoroughly. Combine sugar and beaten eggs; add melted butter. Add flour mixture alternately with milk, a small amount at a time to sugar-egg mixture. Beat until smooth. Add extract. Chill dough for easier handling. roll out dough on floured surface, to 1/2 inch thick. Cut with floured doughnut cutter and fry in deep hot fat.

Have a kettle of boiling water on the side, and as you lift the doughnuts out of grease, plunge quickly in and out of boiling water. This cuts grease. Drain well at once on paper towels. Shake doughnuts in a bag of sugar while warm.
