SNICKERDOODLE COFFEE CAKE 
TOPPING:

1/4 c. sugar
1/2 tsp. cinnamon

CAKE:

1 3/4 c. all purpose sifted flour
2 1/2 tsp. baking powder
1/2 c. sugar
1/2 tsp. salt
1/4 c. shortening
1 egg
3/4 c. milk

TOPPING: Mix sugar and cinnamon. Cut in butter with a fork until mixture makes coarse crumbs; reserve.

CAKE: Grease an 8" square pan and heat oven to 400 degrees. Sift flour, baking powder, sugar and salt into a bowl. cut shortening into flour as if making biscuits. Stir egg mixture quickly into dry ingredients. Spread dough evenly in greased pan. Sprinkle topping over dough.

Bake 20 to 25 minutes or until done. Serve hot.

Makes 8 large pieces. NOTE: To test, put a wooden pick into center. If the bread is done, the pick will come out clean.
