COTTAGE POTATOES 
5 lg. potatoes, cooked, peeled and diced
1/4 lb. cheddar cheese, chopped
1 med. onion, chopped
1/4 can (4 oz.) pimentos, chopped
1/2 c. chopped fresh parsley
1/2 green pepper, chopped
1/2 slice fresh bread cubed or croutons
Salt and pepper to taste
1/2 c. melted butter
1/2 c. milk
1/2 c. corn flakes

Combine vegetables and mix well. Place in lightly buttered baking dish. Pour melted butter and milk over top. Sprinkle with corn flakes. Bake in oven at 400 degrees for 30 minutes. Do not cover.
