CORN FRITTERS 
1 3/4 c. sifted flour
3 tsp. baking powder
1/2 tsp. salt
1 egg, slightly beaten
1 c. milk
1 tbsp. melted Crisco

Sift flour, add baking powder and salt. Sift again. Combine beaten egg, milk and melted Crisco. Pour into flour mixture and stir until smooth. Add 1 1/2 cup whole kernel corn. Drop dough by tablespoons into deep, hot fat and fry for 3 to 5 minutes, or until browned evenly, turning fritters when they come to the surface. Serve hot with maple syrup.

For a healthier option I fry them with a little bit of butter rather then shallow/deep frying them! Same recipe works, the result is more of a corn pancake.

This works !! It good but I eat them as appetizers add a little onion powder and dip them in ranch rocks !! I usually split the butter and lard 50/50
