FRESH APPLE MINI CAKE 
3 eggs
1 c. oil
3 c. flour
1 tsp. cinnamon
3/4 tsp. salt
3 c. peeled, diced apples
1 c. chopped nuts
1/2 c. apple juice
2 tsp. vanilla
1 3/4 c. sugar
1 tsp. baking soda
1 c. mini chocolate chips

Beat eggs slightly in large bowl, add oil, apple juice and vanilla. Combine flour, cinnamon, soda, salt and sugar. Stir into batter until smooth, add apples, mini chips and nuts until evenly mixed. Pour into 2 (8") pans and bake at 350 degrees for 45 minutes or until done. Remove from pans to cool and ice.

CREAM CHEESE FROSTING: Beat 3 ounces cream cheese and 2 tablespoons softened butter, beat until well blended. Add slowly 2 cups confectioners' sugar and 1 teaspoon vanilla, beat until smooth.
