DATE SWIRLS 
1/2 lb. dates
1 tsp. lemon juice
1/3 c. water
1/4 c. sugar
1/2 c. chopped nuts
1/2 c. butter
1/2 c. brown sugar
1/2 c. white sugar
1 egg
2 c. flour
1/2 tsp. baking soda
1/4 tsp. salt

Mix together dates, lemon juice, water and 1/4 cup of sugar. Cook together 5 minutes stirring constantly. Remove from heat; add nuts, let filling cool before spreading on cookie dough. Combine butter, brown sugar, 1/2 cup white sugar, egg, flour, soda, and salt and beat well. Roll dough about 1/4" thick. Spread with date filling. Roll. Wrap in wax paper and refrigerate overnight. Slice and bake on greased cookie sheet at 350 degrees until lightly browned.
