VICTORIA'S HOMEMADE CORNBREAD 
1 c. yellow corn meal
1 c. flour
2 tbsp. sugar
4 tsp. baking powder
1/2 tsp. salt
2 slightly beaten eggs
1 c. milk
16 oz. whole kernel corn, drained
1/4 c. shortening

Measure all ingredients into bowl in order listed. Stir until just moistened. Beat vigorously for 1 minute. Pour into greased 9X9 pan and bake at 425°F for 20-25 minutes, or until golden brown.
