PROCESSOR PIE DOUGH | |
1 stick plus 4 tbsp. very cold butter 1 3/4 c. unbleached all-purpose flour 1/2 tsp. salt Pinch sugar 1/4 c. very cold water In food processor mixing bowl, place flour, salt and sugar. Process until blended. Add cold butter, cut up into jelly-bean sized pieces. Pulse 7 to 9 times to resemble oatmeal. Add cold water all at once, and pulse on and off 3 to 5 times, until mixture just begins to hold together. Don't over process. Turn onto waxed paper or plastic wrap and use wrap to press mixture into a flattened ball. Refrigerate, wrapped, one hour. Enough for two crusts. For baked pie shell, weight with dry beans or rice (on waxed paper) and bake at 425 degrees 10-15 minutes. |
