CLARIFIED OR RENDERED BUTTER (SAMIN IMFAQIS) | |
Clarified or rendered butter is used especially in rice recipes, baked Kibby and all pastries. Melt 5 pounds creamery butter in a deep sauce pan on low heat for 30 minutes. Se aside for 30 minutes to let residue settle on the bottom of the pan. Remove any foam that may still appear on the top. Pour the clear, clarified butter in a jar. Cool and store in the refrigerator for future use. |
