PUMPKIN MUFFINS | |
1 1/2 c. flour 1/2 c. granulated sugar 2 tsp. baking powder 3/4 tsp. salt 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1/4 c. butter 1 c. chopped pecans 1 egg, well beaten 1/2 c. milk 1/2 c. canned pumpkin Sift together first six ingredients. Cut in butter; add pecans. Combine well beaten egg with milk and pumpkin, add to flour and butter mixture, stirring only until flour is moistened. The batter will be lumpy. Pour into buttered muffin tins; sprinkle 1/4 teaspoon granulated brown sugar over the top of each muffin. Bake at 400 degrees for 18 to 20 minutes. Serve immediately. Makes 12 muffins. |
