RHUBARB COBBLER 
4 c. rhubarb
1/3 c. flour
1 1/2 c. sugar
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. lemon extract

BATTER:

2 tbsp. butter
1/2 c. sugar
1 tsp. salt
1 egg
1/2 c. flour
3 tsp. baking powder
1/2 c. milk

Mix rhubarb and rest of ingredients and put in glass or Teflon coated 9x13 inch pan. Beat batter mixture until smooth and pour over rhubarb. Bake at 375 degrees for 45 minutes. Serve with ice cream or cream.
