SPANISH RICE 
1 lb. lean ground beef
1 sm. green pepper, chopped
1 med. onion, chopped
1 c. brown rice
4 slices low-fat cheese
1 can tomato soup
1/4 c. catsup
1 tbsp. chili powder, or to taste

Brown lean ground beef together with chopped onion and green pepper. Drain thoroughly.

While meat is browning, cook rice according to package directions. In a square casserole dish, mix beef mixture and rice together. Add tomato soup, catsup and chili powder. Mix well.

Bake at 350 degrees for 20 to 25 minutes. Add cheese slices to the top during the last five minutes and cook until melted. Makes 6 servings.
