ZUCCHINI CASSEROLE 
6 c. chopped zucchini
1/2 c. chopped onion
1 to 1 1/2 c. grated carrots
1 c. sour cream
1 can cream of chicken soup
1 box chicken flavor Stove Top stuffing
1 stick melted butter

Boil zucchini and onion 5 minutes. Add to mixed carrots, sour cream, and soup. Layer 1/2 of stuffing and butter in 9 x 13 pan. Spoon zucchini mixture on top. Sprinkle the top with the remaining stuffing mixture. Bake at 350 degrees for 45 minutes.
