ZUCCHINI CASSEROLE 
6 c. cubed zucchini squash
1/2 c. chopped onion
1/2 c. shredded carrot
1 c. sour cream
1 (16 oz.) pkg. chicken flavored Stove Top stuffing
1/2 c. butter, softened

Cook zucchini in salt water for 2 minutes; drain and cool. Combine sour cream, onions, and butter; mix with stuffing mix. Put 1/2 of the crumbs on the bottom of pan; cover with zucchini and cover with the rest of the crumbs. Bake at 350 degrees for 1 hour.
