ALMOND BISCUITS (Chinese) 
3 c. flour
2 tsp. baking powder
1 stick butter
1 c. sugar
1 egg
1 tsp. almond essence
Blanched almonds
Beaten egg for glaze

Place flour, baking powder and salt into a bowl. Cream butter and sugar until white and fluffy. Beat in the egg and almond essence. Stir in the sifted dry ingredients to make a stiff dough.

Form into balls 1 inch in diameter and place on greased baking sheet. Place half an almond on each ball and flatten slightly. Brush with beaten egg. Bake at 350 degrees for 20 minutes.
