GARY'S FAVORITE SUNSHINE SALAD 
1 pkg. lime gelatin
1 c. hot water
1 (20 oz.) can crushed pineapple (2 1/2 c.)
1 c. grated carrot
1/3 c. chopped pecans (optional)
1 c. cottage cheese

Dissolve jello in hot water. Drain pineapple reserving liquid. Add water to liquid to make 1 cup and add to gelatin. Chill until partially set.

Fold in carrot, pineapple, and nuts. Turn into ring mold. Chill until firm. To serve, place mold on serving plate with cottage cheese in the center of the ring.
