CORNMEAL COOKIES | |
1/2 c. butter 1/2 c. sugar 1 egg (or 2 1/2 tsp. water) 1/2 tsp. vanilla 1 1/2 c. flour 1/2 c. cornmeal 1/2 tsp. baking powder 1/4 tsp. salt 1/2 tsp. nutmeg, if desired Beat the butter until light and fluffy. Add the sugar a little at a time and beat constantly. Add egg and beat until light and fluffy. Add vanilla. Sift together in another bowl the flour, cornmeal, baking powder, salt and nutmeg. Mix dry ingredients with the egg and sugar mixture. Mix well. Roll out on a floured board, cut with a cookie cutter. Bake in a hot oven 400 degrees about 6 minutes. Makes about 6 dozen cookies. |
