MICROWAVE VEGETABLE MEDLEY 
3-4 med. zucchini, sliced
2-3 med. tomatoes, sliced
1 med. onion, sliced very thin
1/2 to 3/4 lb. fresh mushrooms, sliced thin
2 tbsp. butter
1/2 lb. smoked sausage (optional)
1/2 c. Parmesan cheese

In 3-quart microwave bowl, layer zucchini, tomato, onion and mushrooms; repeat until all vegetables are used. Top with butter. Sprinkle with cheese. Cover with plastic wrap or waxed paper and microwave on high for 10 minutes. To turn this into a hearty main dish, add sausage sliced into bite-sized pieces to the vegetable layers. Great as a side dish or meal.

Since microwave ovens vary in power, you may need to adjust your cooking time.
