SPINACH MEATBALLS | |
1 lb. hamburger 1/2 c. finely chopped onion 1 egg, beaten 1/4 c. Parmesan cheese 10 oz. frozen chopped spinach, thawed and drained 1/2 tsp. salt 1/4 tsp. pepper 1/4 tsp. garlic powder Combine all ingredients above. Form into desired sized balls. Brown quickly and lightly. Place meatballs in casserole dish. Top with the following sauce: 8 oz. tomato sauce 1/4 c. dry red wine 2 tbsp. cornstarch Combine and heat on stove first, then pour over meatballs. Microwave 10 minutes or so. Or in conventional oven until heated through. Serve over hot cooked rice. |
