COCONUT CREAM CAKE | |
1/2 c. shortening 1/2 c. butter 2 c. sugar 5 eggs, separated 2 c. sifted flour 1 tsp. baking soda 1 c. buttermilk 1 2/3 c. angel flake coconut Blend shortening, butter and sugar; add egg yolks, beat well. Sift flour and soda together and add alternately with buttermilk. Add coconut. Beat egg whites and fold into mixture. Pour into well-greased pan and bake at 350 degrees for 25 to 30 minutes. ICING: 1/2 c. butter 8 oz. cream cheese 1 box powdered sugar 1 tsp. vanilla 1/2 tsp. salt, if desired 1/2 c. nuts (pecans) 1 c. coconut Mix well and spread over cake. You can use lowfat cream cheese, if desired. |
