SWEET AND SOUR RED CABBAGE 
Artifical sweetener to equal 2 tbsp. sugar
3 tbsp. cider vinegar
1/8 tsp. each ground cinnamon, allspice and cloves
4 c. chopped red cabbage
2 c. water

Combine cabbage, water and vinegar in a saucepan. Cook covered for 15 minutes, or until cabbage is tender. Drain cooking liquid in a bowl. Stir sweetener and spices into liquid. Pour over cabbage, stirring to mix over and allow to marinate 15-20 minutes. Serve warm or cold. Divide evenly. Yield: 2 serving - each serving is equivalent to: 2 cups vegetable.
