BOURBON CHICKEN WITH PEACHES 
4 bone-in chicken breast halves
1/2 tsp. salt
1/8 tsp. pepper
2 tbsp. butter
1 large onion, chopped
1 tsp. paprika
1 1/2 c. chopped green onion
1/2 c. orange juice
2 tbsp. bourbon
1 c. chopped fresh peaches
dash of ground nutmeg

Sprinkle chicken with salt and pepper and arrange in 13 x 9-inch pan. Set aside. Melt butter in skillet over medium heat; add onion and saut 5 minutes or until tender. Stir in paprika. Add green onions, reserving 1 tablespoon. Cook, stirring occasionally, 4 minutes. Spread onion mixture over chicken. Drizzle with orange juice and bourbon.

Bake at 400°F for 50 minutes, turning occasionally and basting with pan drippings. Top with peaches and nutmeg.

Bake 15 more minutes or until done. Sprinkle with reserved green onions.
