SIX WEEK BRAN MUFFINS | |
4 c. bran cereal 2 c. boiling water 3 c. sugar 1 qt. buttermilk 5 c. flour 2 tsp. salt (optional) 5 tsp. baking soda 2 or 3 tsp. cinnamon (optional) 2 c. oatmeal 1 c. butter, melted 4 eggs, beaten Pour boiling water over bran cereal and let stand while assembling other ingredients. Mix in melted butter. Mix rest of the bran cereal and the oatmeal with the sugar, egg, and buttermilk. Sift flour, soda, and salt together. Combine all the ingredients and bake as needed at 400 degrees. Mixture will keep in refrigerator for 6 weeks. Makes 6 dozen. |
