BRAN MUFFINS FOR THE WEEK 
9 c. oat bran flour
3 tsp. salt (optional)
4 tbsp. baking powder
8 egg whites
2 tbsp. vanilla
8 tbsp. Canola oil
1 (42 1/2 oz.) jar applesauce
1 lg. frozen can apple juice
4 tbsp. cinnamon
3 tbsp. cloves

Combine flour, salt, baking powder, spices. Add eggs, oil, vanilla and applesauce. Mix juice in pitcher according to directions. Add about half of pitcher to moisten mixture.

Line muffin cups with paper liners - fill 1/2 to 2/3 full. Bake at 400-425 degrees for 10-15 minutes. Store in freezer. Makes about 3 dozen.
