QUICHE 
2 (4 oz.) cans green chilies, chopped
1 lb. Monterey Jack cheese natural, grated
1 lb. sharp Cheddar cheese, grated
6 eggs
1 sm. can evaporated milk
Dash of Tabasco sauce
Dehydrated onion (optional)

Line bottom of greased cake pan. Layer chilies. Add grated cheese, sprinkle with dehydrated onion. Beat 6 eggs with evaporated milk. Add Tabasco and cover cheese and chilies. Bake at 350 degrees for 20 to 25 minutes.
