RICE AND ALMOND SALAD 
2 c. cooked brown rice, chilled
1/4 tsp. curry powder
1/2 c. homemade mayonnaise
1/2 c. celery, finely chopped
1/2 c. toasted almonds, slivered

Place the chilled rice in a chilled bowl and add the rest of the ingredients. Toss lightly and serve at once on lettuce.
