CREAM OF ZUCCHINI SOUP 
5 or 6 c. unpeeled sliced zucchini
1 lg. onion, chopped
2 tbsp. chopped parsley
1 chicken bouillon cube
Salt to taste
2 tbsp. butter
1/3 to 1/2 c. light cream or milk
Salt and pepper

In large saucepan over medium heat, cook zucchini, onion, parsley and bouillon cube until very tender. Add salt to taste. When cool, put in blender and puree. Add salt and pepper to taste and heat but do not boil. Add cream and butter. Heat and eat.
