ZUCCHINI CASSEROLE WITH SOUR
CREAM
 
2 lbs. zucchini, sliced (3 med.)
2 tbsp. butter
1/4 c. dairy sour cream
1 tbsp. grated processed cheese
1/2 tsp. salt
1/8 tsp. paprika
1 egg yolk, beaten
1 tbsp. chopped chives
1/2 c. cracker crumbs
2 tbsp. melted butter

Cook sliced zucchini in small amount of boiling salted water until tender-crisp. Drain and place in greased 1 1/2 quart casserole. Meanwhile, melt butter. Stir in sour cream, cheese, salt, and paprika; stir constantly while cooking over low heat until cheese is melted. Remove from heat and stir in egg yolk and chives. Stir into zucchini. Toss cracker crumbs with melted butter. Place over zucchini. Bake in 350 degree oven for 20 minutes.
