GINGER OATCAKES 
1 1/2 c. milk
3/4 c. quick cooking or reg. rolled oats
1 c. flour
1 1/2 tsp. baking powder
3/4 tsp. cinnamon
1/4 to 1/2 tsp. ground ginger
1/4 tsp. baking soda
1 egg, beaten
3 beaten egg whites
2 tbsp. cooking oil
2 tbsp. molasses
Sliced bananas (optional)
1/2 c. blueberries (optional)
Orange marmalade (optional)

Heat milk over low heat just until hot, stirring occasionally. Stir in oats. Remove from heat and let stand 5 minutes. Combine next 5 ingredients; stir into oat mixture. Add oil and molasses; stir. Add eggs or Egg Beaters. If using egg whites, fold in gently. Pour 1/4 cup batter onto a hot, lightly greased skillet. Cook until golden on each side. Makes 14 pancakes.

May use 1/2 c. Egg Beater instead.
