“VOODOO CHICKEN SALAD” IS IN:

VOODOO CHICKEN SALAD 
This spicy dish delivers the tastes of sweet, sour, hot, and salty to the table for a refreshingly different Summertime salad.

Voodoo Dressing:

2 tablespoons Dijon mustard
2 tablespoons freshly squeezed lime juice
2 tablespoons chili paste
1 tablespoon crushed red pepper
1/3 cup real mayonnaise
3/4 cup sesame or extra virgin olive oil
1/2 cup white wine vinegar
1/4 cup soy sauce
3/4 cups sugar
2 tablespoons garlic, peeled
2 tablespoons ginger, peeled

Chicken Salad:

2 halved, grilled chicken breasts, cubed, skin removed
2 tablespoons Feta cheese (optional)
salt and pepper, to taste
paprika

Place all dressing ingredients into the bowl of a blender or food processor and process until smooth. Serve over cubed just-grilled chicken breast which has been arranged over crisp lettuce sprinkled with crumbled Feta cheese.

Dress up the dish with halved cherry tomatoes or vine-ripened tomato wedges. Sprinkle with paprika for a color accent.

WOW! And it's not even summer! I prepared this for a holiday potluck, and it was a huge hit! The dressing is a very unusual blend of sweet and spicy, even savory flavors... I did it with halved cherry tomatoes (which are, of course, a bit on the sweet side) and served it topped with shredded cheddar and sour cream, omitting the feta (some of the folks in my group refer to feta as "stinky cheese" (I thought that was gorgonzola... oh well LOL). It was EXCELLENT! I am looking forward to trying it with the added mustiness of the feta. I will definitely make it again :)

Hrm... wonder if it'd be good with black olives?

I made this tonight, sub. chili paste for hot sauce, and used spinach instead of lettuce... Everyone loved it... The taste of everything together was superb... Very tasty

I added nothing, subtracted nothing, absolutely delicious as the recipe exactly is. Often when I make a recipe I will adjust latter preparations, but not with this VooDoo Chicken.

Stands wonderfully as is.

I did not blend the sauce ingredients, just mixed together with a whisk, added sliced green onions, bowtie pasta and cherry tomatoes to the cubed chicken!!!... GREAT COLD PASTA SALAD
