1 1/4 c. all purpose or 2 1/2 c. cake flour
1 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
3/4 c. milk
1/3 c. shortening
1 egg
1 tsp. vanilla

Preheat oven to 350 degrees. Grease and flour 8"x8"x2" or 9"x9"x2" square pan or 9" x 1 1/2" round pan. Beat all ingredients in large mixer bowl on low speed, scraping bowl constantly, 30 seconds. Beat on high speed, scraping bowl occasionally, 3 minutes. Pour into pan. Bake at 350 degrees until wooden pick inserted comes out clean. Square pan 35 to 40 minutes, round pan 35 minutes; cool and frost.

NOTE: If using self rising flour, omit baking powder and salt.
