RICE WITH PARSLEY AND PEAS 
3 tbsp. butter
2 tbsp. chopped onions
1 c. raw rice
2 c. water
1 bay leaf
Salt and freshly ground pepper to taste
1/4 tsp. cayenne pepper or Tabasco sauce
Frozen peas
2 tbsp. finely chopped fresh parsley

1. Melt the butter in a saucepan and add the onion. Cook until wilted. Add the rice and stir briefly.

2. Add the water, bay leaf, salt, pepper and cayenne pepper.

3. Bring to boil. Cover and simmer 20 minutes.

4. Run frozen peas through hot water and drain. Add to rice mixture and heat through and stir.

5. Add parsley and stir. Yield 4 servings. Kids enjoy this protein dish.
