POOR BOY STEAK | |
1/2 c. flour 1 tsp. salt 1 lb. ground beef Sprinkle 1/4 cup flour and 1/2 teaspoon salt in 8 inch baking pan. Place raw ground beef over the flour and salt. Flatten the meat by patting or rolling lightly with a rolling pin. Sprinkle the remaining flour and salt on top of the meat. Roll and pat lightly until the meat covers the pan evenly and the flour and salt have been absorbed into the meat. Cut the meat into 6 steaks. Bake at 400 degrees for 20 minutes. Drain steaks and place in baking pan. Prepare brown gravy. BROWN GRAVY: 1/2 c. fat 1/2 c. flour 1/2 tsp. salt 1 1/2 c. water or broth Melt fat in a sauce pot. Blend in flour and salt. Cook and stir constantly until light and brown. Remove from heat; let cool. Gradually stir in broth. Cook until thickened. Continue cooking a few minutes, stirring occasionally. Pour over Poor Boy Steaks, cover pan. Bake at 400 degrees for 25 minutes. |
