CHICKEN CASSEROLE 
2 pkg. boneless chicken
1 c. sour cream
1 can cream of chicken soup
1 1/2 tbsp. lemon juice
1/2 sm. box Ritz crackers (1 1/2 tubes)
1 tbsp. poppy seed
1 stick butter, melted

Boil chicken; shred. Spread cooked chicken in greased baking dish. Mix next 3 ingredients and pour over chicken. Crush crackers and add poppy seed. Then sprinkle over top of mixture. Spoon on melted butter. Bake at 350 degrees for 30 minutes. Makes enough for 4 to 6 adults.
