VANILLA CREAM PIE 
3/4 c. sugar
1/3 c. flour or 3 tsp. cornstarch
1/4 tsp. salt
2 c. milk
3 slightly beaten eggs
2 tbsp. butter
1 tsp. vanilla
1 (9 in.) pie shell
1 recipe meringue

In saucepan, combine first 3 ingredients; mix, gradually stir in milk. Cook and stir over medium heat until mixture boils and thickens. Cook 2 minutes longer. Remove from heat. Stir small amount hot mixture into egg yolks and return to hot mixture; cook 2 minutes stirring constantly. Remove from heat, add butter and vanilla; cool to room temperature (put wax paper of plastic wrap directly on top, touching surface of hot mixture to prevent crust from forming). Pour into baked pie shell.

Meringue: Beat 3 egg whites with 1/4 teaspoon cream of tartar and 1/2 teaspoon vanilla until soft peaks form. Gradually add 6 tablespoons sugar, beating until stiff peaks form. Spread over pie, sealing to pastry. Bake at 350 degrees 12 to 15 minutes until golden brown.
