GRANDMA'S FAVORITE OATMEAL
COOKIES
 
1 3/4 c. flour
1 tsp. baking soda, salt & cinnamon
1/2 c. shortening
1 1/4 c. sugar
1/3 c. light molasses
2 eggs
1 c. rolled oats
1 c. raisins (opt.)
1/2 c. chopped walnuts or other nuts (opt.)

Stir together flour, baking soda, salt and cinnamon, set aside. In large bowl cream shortening, sugar, molasses and eggs until fluffy. Stir in flour mixture, then oats, raisins and walnuts. Drop by rounded teaspoonfuls 1 1/2 to 2 inches apart on greased baking sheets. Bake in preheated 400°F oven for 10 to 12 minutes or until lightly browned. Remove to rack to cool. Makes 60. Per cookie - 75 calories, 1 g. protein, 12 g. carb., 3 gr. fat, 8 mg. cholesterol.
