CRANBERRY MUFFINS | |
2 c. flour 1 1/2 tsp. baking powder 1/2 tsp. baking soda 2 tsp. grated orange peel 1 1/2 tsp. nutmeg 1 tsp. cinnamon 1/2 tsp. ginger 1/2 c. shortening 3/4 c. orange juice 2 eggs, slightly beaten 1 1/2 c. chopped cranberries 1 1/2 c. chopped walnuts In medium bowl, mix flour, sugar, baking powder, baking soda, orange peel, nutmeg, cinnamon and ginger. Cut in shortening. Stir in juice, vanilla and eggs. Fold in cranberries and walnuts. Spoon into greased muffin cups. Bake at 300 degrees for 30 to 35 minutes or until done. Makes 18 muffins. |
