STRAWBERRY MUFFINS 
2 tbsp. butter
2/3 c. sugar
1/2 c. milk
1 egg
1/2 tsp. salt
1 1/2 c. flour
1 tsp. baking powder
1 c. chopped strawberries

Cream butter and sugar together. Add egg; mix. Add milk; add dry ingredients, plus fruit, fold together gently. Do not over mix! Bake in 350 degree oven for 35 minutes or until lightly golden. I have used all sorts of fresh fruit in these and they are always good. Baking time may vary if frozen fruit is used. Yield: 1 dozen muffins.
