FRIED RICE BALLS | |
1 1/2 c. water 2/3 c. uncooked rice 1 1/2 c. unsifted flour 1 1/2 tsp. baking powder 1 1/2 tsp. cinnamon 1 1/2 tsp. nutmeg 1/4 tsp. salt 2 eggs 2 tbsp. sugar Vegetable oil for deep frying Cool rice to room temperature. Meanwhile, combine flour, baking powder, cinnamon, nutmeg, and salt. Sift together and set aside. In deep bowl, beat eggs and sugar for 2 to 3 minutes with whisk. Add rice, mixing well until separated and evenly coated. Add flour mixture 1/2 cup at a time, stirring well between. Use wet hands to shape 2 1/2-inch balls; set aside. Fry at 350 degrees in 3 inches oil until golden. Roll in cinnamon and sugar or powdered sugar. Serve hot. |
