SPINACH SALAD 
1 bag fresh spinach, cleaned & stemmed
1/2 lb. sliced mushrooms
1 sm. onion, cut into rings
Bacon bits
Croutons

DRESSING:

2 tbsp. Dijon mustard
1/4 c. honey
1/4 c. red wine vinegar
1 c. oil

Place dressing ingredients in jar and shake until blended.

In large salad bowl, place spinach, mushrooms and onions. Add dressing to your taste (as heavy or light as you like). Garnish with bacon bits and croutons. Excellent with sausage/chicken jambalaya. Serves 6.
